Kushi oyster with smoked trout roe, green tea noodles, X.O sauce, beet dust, & pickled baby cucumbers.

Scallops, with pickled sardines, turnips, cashews, pomegranate, & black garlic soubise.

Congee rice pudding & quinoa, with pigs tongue, apples, charred lettuce.
